Chocolate Raspberry Truffle Overnight Oats

Hello all! I'm back with another overnight oats recipe. If you haven't noticed by now, I love overnight oats. :)

Valentine's Day is this Saturday. And everywhere I look it's extremely evident. I've never been one to make a big deal of Valentine's Day. Growing up, my father always referred to it as amateur day (even though he always spoiled my mother and me). Granted, part of the reason I was never that mushy about this particular holiday is I was single for 22 straight years of my life (yes, I was the wallflower). But even now that I'm happily in a relationship, I still think it's overhyped. People place too much pressure on this one day. It's like the end-all-be-all of a relationship. In my opinion, if you have to make a grand gesture to tell your significant other you love them, but you're not doing little things to show how much you care throughout the year, you've missed the boat. It's too much pressure. Now a warning to the fellas reading this: not all females feel the same as I. So feel out your girl and, if she's expecting something big, just do it so she doesn't get upset. Ha!

That being said, I do have some very fun things up my sleeve to surprise Nathan this weekend. Because I do love holidays. All holidays. Therefore I must celebrate them to the max. Post on our adventures to come. :)

Now that I'm off my soapbox, let's get down to the good stuff. Chocolate truffles are obviously a valentines day staple. Raspberries generally go hand-in-hand with the holiday as well (being a red-colored fruit). Chocolate raspberry truffles are quite delicious. So I decided to put together an overnight oats recipe based on the scrumptious treat.

Toss the unhealthy box of chocolates and nom on this instead for a yummy Valentine's Day breakfast!

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
¼ c. non-fat plain Greek yogurt
1 Tbsp. cacao powder
1½ Tbsp. raspberry jam
Fresh raspberries (to top)

~ Directions ~

Combine all the ingredients and store in a mason jar or other sealed container overnight, or at least for a few hours.


Top with fresh raspberries before eating. Make this and enjoy as a decadent Valentine's Day breakfast with the one you love.
