Honey Garlic Quinoa Spring Rolls

Hello world. Happy Saturday! I hope you're enjoying your weekend so far. The weather here in Central Florida has been pretty miserable today. Gloomy and rainy. Perfect nap weather, which is exactly what I've been doing a good portion of the day. It has been glorious!

A while back I got on a kick of experimenting with rice paper. It's light and doesn't have a ton of flavor unto itself, which opens up a lot of possibilities. Rice paper is generally used for making spring rolls. However, I came up with some cool dessert recipes and other fun tasty treats using them. I'll need to post those on here some time.

It has been a while since I've done anything with rice paper. But this evening I found myself in the mood to experiment with quinoa in a spring roll. I had some delicious fresh honey from Isaiah's Garden on hand, and figured I'd try that mixed with garlic in the quinoa. The results were quite delicious.

This recipe is a quick make. I'll be keeping it in mind for busy nights during the work week when I don't have a lot of time to make dinner. It's perfect for a fast meal on the go.

Honey Garlic Quinoa Spring Rolls

~ Ingredients ~

Makes 1 Serving (2 Rolls)

2 sheets rice paper
1/4 c. quinoa
1/2 c. water
1 tsp. honey (I used Isaiah's Garden Pure Honey)
1 clove garlic, minced
Fresh kale
Alfalfa sprouts
Carrots, sliced

~ Directions ~

Cook the quinoa in 1/2 c. water until the grains are fluffy and the water has evaporated. Once the quinoa is cooked, mix in the honey and garlic.

Meanwhile, lightly run water over one of the sheets of rice paper. This will cause the paper to soften. Lay on a flat surface. Place the desired amount of kale, sprouts and carrots on the middle portion of the rice paper. Spoon half of the quinoa on top and roll the rice paper closed.


Repeat this process for the other sheet of rice paper, using the remaining quinoa.


Enjoy this for a quick and healthy dinner tonight!
