Very Berry Coconut Overnight Oats

Good morning Internet! I noticed your breakfast is lacking freedom. Please allow me to help you with that. I'm about to rain a whole mess of freedom on your morning meal.

In just a few days we will celebrate our nation's independence. I love the 4th of July (let's be honest, I love all holidays). While I don't agree with a good many things that are happening in our country right now, I still believe we're the greatest country in the world.

I'm especially excited because Nathan and I are heading to Washington DC for the weekend. We were up there for the 4th last year and we had a blast! It's the perfect place to celebrate America's independence (and both of us need a weekend away - it's been a hell of a time the past few weeks). Of course, this occasion called for another themed overnight oats recipe. So, here it is. Red, white and blue overnight oats. Filled with berry coconut-y goodness.

Start your day off with some freedom. 'Murica!

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
½ tsp. coconut extract
½ tsp. stevia
Handful of blueberries (fresh or frozen)
3 strawberries (fresh or frozen)

~ Directions ~

In a bowl, combine oats, almond milk, chia and flax seed. Mix well.


Separate the oat mixture into three portions and split between three bowls.

Bowl #1 - Blueberry: Place the blueberries in a blender and pulse until it forms a puree. Combine the puree and the oat mixture.

Bowl #2 - Vanilla: Add the coconut extract and stevia, and mix until combined.

Bowl #3 - Strawberry: Place the strawberries in a blender and pulse until it forms a puree. Combine the puree and the oat mixture.

The next step is to layer the three oat mixtures. Grab a mason jar or other container that can be sealed. Start by spooning the strawberry oat mixture into the jar, followed by the coconut and blueberry. Seal and store in the refrigerator overnight - or at least for a few hours - so the oats can set.


And there you have it. Red, white and blue overnight oats. You can celebrate America even with your breakfast.
