Pecan Pie Overnight Oats

Merry Christmas one and all!!

You know what has me excited this week? It's not the fact that Christmas is only a little over a week away. Although don't get me wrong, I'm pretty excited about that too. But no, what has me beyond excited this week is the fact that in a few short days I will be at the premiere for Star Wars: The Force Awakens.

OK, so that really has nothing to do with the holidays or this post. But I'm in legitimate fangirl freakout mode at the moment, so I had to mention it.

Geek moment aside, I am fully entrenched in the Christmas season. I've been so busy shopping for presents and various parties and get-togethers, I've found it hard to slow down and just enjoy my favorite time of the year.

Sometimes you just need to stop, make some Christmas overnight oats, and then take pictures of it in front of your Christmas tree. I've put together quite a few Christmas-y overnight oats recipes over the past two weeks that I'm looking forward to sharing with you as we lead up to Christmas. Today's recipe is for Pecan Pie Overnight Oats.


Because who doesn't want pie for breakfast? OK, so some of us feel a little shameful about noming down on an actual pie first thing in the morning. I am not one of those people. But for those of you who like to stick to a more nutritious meal to start your day, Imma help you out.

This pie is so good, even Santa and Mrs. Clause want to get themselves a slice. Shhh...don't tell them it's actually healthy - loaded with calcium, potassium, and good carbohydrates.

Oats in a pie dish. I fooled you into thinking this was actually Pecan Pie, didn't I? ;)

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
1 tsp. vanilla extract
¼ tsp. butter extract
¼ tsp. ground cinnamon
½ tsp. stevia
1 Tbsp. chopped pecans

~ Directions ~

Combine all ingredients in a mason jar or other sealable container and let set in the refrigerator overnight, or at least for a few hours.
