Happy Saturday!

I love experimenting with egg whites. They don't have much of a natural flavor to begin with. This makes them perfect for more outside-the-norm omelet recipes. You can combine more flavors with the egg whites because the flavor of the egg isn't competing so much. I always use them for sweet omelet recipes.

I had a lone banana sitting on my counter that was getting a little too ripe. Usually, I would slice it up and stick it in the freezer to use later for a smoothie. But I already have a few frozen bananas on hand and wanted to do something a little more creative with this one. So came to me the idea for this sweet egg white omelet, which has a decadent chocolatey banana filling.

I have a major sweet tooth. As a child, I would only eat sugary goodness for breakfast (sugary cereal, pop-tarts, etc.). This was especially true for chocolate. I'm a major chocoholic. As an adult, I've cleaned up my eating significantly and learned the importance of a healthy diet. So I'm always looking for ways to get my chocolate fix for breakfast in a healthy way. This little dish definitely satisfied that craving. I enjoyed it with a slice of cinnamon raisin Ezekiel Bread.

Gone Bananas Egg White Omelet

(Clean Chocolate-Banana Egg White Omelet)

~ Ingredients ~

2 egg whites (or 3 if you're really hungry)
¼ tsp. ground cinnamon
½ tsp. stevia
1 ripe banana
½ Tbsp. cacao powder

~ Directions ~

In a small bowl, whisk together the egg whites, cinnamon and stevia. Combine the banana and cacao powder in a blender or food processor and blend until the mixture is smooth.

Heat a skillet on medium-high heat. Cook the egg white mixture until somewhat firm. Flip and cook until both sides are almost done. Turn the heat down to medium-low. Spread the banana mixture on top of the egg whites. Allow to sit on the hot skillet for several more minutes to warm the banana mixture. Fold, transfer to a plate and enjoy!
