Welcome to yet another overnight oats blog post from me. Don't expect them to stop any time soon. I preach overnight oats to everyone. It's so easy to prepare enough for the week on a Sunday afternoon for an easy and nutritious grab-and-go breakfast on busy weekdays when I'm running to work. You can have a healthy breakfast in the morning. No excuse.

Anyway, you may have seen my series of posts earlier this week following the lovely Honey Cake with Lemon Curd & Lemon Meringue Buttercream I made for our Easter banquet. It was divine. If you're trying this recipe I'm going to assume you like lemon, in which case I'm telling you to go check out that cake recipe.

I whipped together some healthy Lemon Curd as a part of that cake recipe to go in between the layers.  It was delicious. And I didn't end up needing all of it for the cake. Which left me wondering about creative ways I could use the leftovers. Obviously, overnight oats popped into my mind. So here it is. Lemon Curd Overnight Oats.
