Anyway, you may have seen my series of posts earlier this week following the lovely Honey Cake with Lemon Curd & Lemon Meringue Buttercream I made for our Easter banquet. It was divine. I whipped together some healthy Lemon Curd as a part of that cake recipe to go in between the layers. It was delicious. And I didn't end up needing all of it for the cake. Which left me wondering about creative ways I could use the leftovers. Obviously, overnight oats popped into my mind. So here it is. Lemon Curd Overnight Oats.

~ Ingredients ~
½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
2 Tbsp. Lemon Curd
1 tsp. vanilla extract
Berries of your choice (I used raspberries)
