Funfetti Cake Overnight Oats

Hi friends!

I know I haven't been posting much lately. As I mentioned in my last post, I'm in the midst of moving. And there have been a lot of other things going on. But I figured I'd take a break from my busy life to share a new recipe with you. Tomorrow is my birthday. I'll be 25. A quarter of a century. And this birthday will get all the pomp and circumstance it deserves. This is the first of several posts to come in the next few weeks about my birthday festivities. I'm super excited. Really, this has been like a birthday month. Nate's birthday is just a week before mine, so we've been celebrating non-stop it seems.

I'm taking the day off work tomorrow, so my coworkers are treating today like it's my birthday. I arrived at the office today to find my office completely decked out in festive decor. And the gals are taking me out to lunch and a happy hour later. I have the best friends/coworkers.

Anyway, since today is somewhat like the beginning of my birthday, I put together a new overnight oats recipe for me to enjoy this morning. Funfetti cake overnight oats, of course! If you have a birthday coming up (or even if you don't) you should give this a try. It turned out fabulously. Legit tastes like funfetti cake, but it's much healthier.

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
1 tsp. vanilla extract
¼ tsp. butter extract
½ tsp. stevia
1 tsp. rainbow sprinkles

~ Directions ~

Combine all ingredients for the oats in a mason jar or other sealable container and let set in the refrigerator overnight, or at least for a few hours. Blow out your candle and enjoy an amazing birthday!
