Looking for a way to escape from your regular morning routine? Why not turn breakfast into an island getaway? It's easy with these strawberry daiquiri overnight oats. Take a bite, close your eyes and just imagine you're on a remote beach basking in the sun.

~ Ingredients ~
½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
¼ c. strawberries, puréed
¼ c. strawberries, puréed
¼ tsp. rum extract
½ tsp. vanilla extract
½ tsp. vanilla extract
½ tsp. stevia
Unsweetened shredded coconut (to top)
Unsweetened shredded coconut (to top)

Combine all ingredients in a mason jar or other sealed container. Let set in the refrigerator overnight, or at least for a few hours before enjoying. Top with a sprinkle of coconut and chow down!
Oats will keep in a sealed container for several days, so you are OK to prepare the beginning of the week for your weekday breakfasts. I always prepare 5 days worth of overnight oats on Sunday afternoon so I have a quick grab-and-go breakfast for the busy weekdays.
Note: The rum extract contains little to no alcohol content, as it is only concentrated rum flavor. I've used it in these oats to give them more of a strawberry daiquiri-like taste. If you do not like the taste of rum, you can leave it out. But no need to be concerned that you're having spiked oats for breakfast.
