Lemon Cream Pie Overnight Oats

Greetings from sunny Florida! Today I walked outside my front door and questioned if I was still in the south. It's COLD outside - around 30 degrees this morning. Brrrr! My heart goes out to all of you experiencing the awful winter weather in the northeast. I wouldn't have the stomach for that. Too much Florida blood in me. This recipe is for everyone experiencing this awful bought of cold weather (which is most of the U.S. at the moment). I wanted to bring a little bit of springtime into your world.



I love fresh juices and using pure ingredients in my foods. Unfortunately, so many ingredients are heavily processed and contain a lot of harmful additives. I'm always very conscious of what I'm putting in my body. It has a major impact on overall wellbeing. So I get excited when I find an all-natural product that is also incredibly delicious and functional.

Recently I tried a few products from a brand called Isaiah's Garden. Every product they produce is all natural with no additives or preservatives. Their flagship product, Isaiah's Pure Natural, is fantastic as a salad dressing. And their Pure Honey is delectable.

I also had to try their lemon juice: Isaiah's Lemon Life. This juice is different from the run-of-the-mill lemon juice you would pick up at your grocery store. They use the ENTIRE lemon. I've been trying to come up with creative ways to use my new Isaiah's Garden products. Obviously, I had to do something with overnight oats, being as obsessed as I am. And here is what I came up with. This recipe uses Isaiah's Garden Lemon Life. It's a perfect breakfast to get you in the Springtime mood and chase away those wintertime blues.

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
¼ c. non-fat plain Greek yogurt
⅛ tsp. almond extract
½ tsp. vanilla extract
½ tsp. butter extract
½ tsp. stevia
1 tsp. lemon juice (I used Isaiah's Garden Lemon Life)
Fresh blueberries (to top)

~ Directions ~

Combine all ingredients and store in a mason jar or other sealed container overnight, or at least for a few hours. Top with blueberries, or perhaps some nuts, if desired.
