Greetings blog readers. I'm back with yet another overnight oats recipe. I know, you're shocked. :)
Next week is St. Patricks Day which means GREEN EVERYTHING. Being the holiday-lover that I am, I had to create a festive overnight oats recipe if only so I can enjoy something clean and green for breakfast in the morning. Chunky Monkey overnight oats is one of my favorite overnight oats recipes. I decided to take that a step further and make it more along the lines of a green smoothie (get your veggies for breakfast), but with oats. And you know what? You can't even taste the spinach.

~ Ingredients ~
½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
Handful spinach
½ banana, sliced
2 Tbsp. non-fat plain Greek yogurt
1 Tbsp. almond butter
½ tsp. stevia
1 Tbsp. cacao nibs

~ Directions ~
In a blender combine all the ingredients aside from the oats, cacao nibs, and sliced banana. Blend until smooth. Move the mixture to a mason jar and combine with the oats, cacao nibs, and sliced banana. Seal and store in the refrigerator overnight, or at least for a few hours. Enjoy your green overnight oats for a fun and healthy St. Paddy's Day breakfast.
