Cinnamon Apple Pie Baked Oatmeal

I'm back with another baked oatmeal recipe for you. Another fall favorite. This one is reminiscent of the flavors of that delicious classic American dessert: apple pie. The warm cinnamon oatmeal houses yummy baked apples for a breakfast that just screams autumn.

~ Ingredients ~

Serves 1

Cinnamon Oatmeal Batter

½ c. rolled oats
¼ c. unsweetened almond milk (or your milk of choice)
1 tsp. ground cinnamon
⅛ tsp. nutmeg
¼ tsp. baking powder
Pinch of salt
½ tsp. vanilla extract
1 Tbsp. maple syrup
Pecans (to top)

Apple Pie Filling

1 Tbsp. chopped apple
½ tsp. stevia
¼ tsp. vanilla extract
¼ tsp. butter extract
½ tsp. ground cinnamon

~ Directions ~

Preheat oven to 350° and grease a small ramekin.

In a bowl, mix together all the ingredients for the cinnamon oatmeal batter. In a separate bowl, mix the ingredients for the apple pie filling.

Scoop half of the cinnamon batter into the ramekin. Next, add the apple pie mixture. Then pour the remaining oats mixture on top, being sure to fully cover the apples. Top with a few pecan halves or chopped pecans.

Bake for 20-25 minutes, or until oatmeal is set and firm. Let cool slightly before chowing down.
