Thin Mint Overnight Oats

Hello, world! It's that time of year again. Yes, the season to stock up on your favorite cookies. I'm talking about Girl Scout Cookie season. Thin Mints are my favorite. Have to get me a few boxes of those.

But, wait, those cookies are unhealthy. Full of added sugar. Cue my overnight oats recipe! I guess I do feel a little guilty coming up with this recipe and telling you to use it as a complete replacement for some delicious Thin Mints. Because then you're not giving money to the Girl Scouts. Maybe I'm a terrible person. But let's face it, you'll still buy some of those cookies because they're amazing.

So you can nom your Thin Mints later in the day and enjoy this little overnight oats recipe as a clean and healthy way to have Girl Scout Cookies for breakfast. Seems like a win-win to me.

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
½ Tbsp. cacao powder
½ tsp. vanilla extract
⅛ tsp. mint extract
½ tsp. stevia
1 Tbsp. cacao nibs (optional)

Combine all ingredients and store in a mason jar or other sealed container overnight, or at least for a few hours. Get out your spoon and enjoy your Thin Mints for breakfast!
