Here it is. Overnight oats recipe number two. I warned you. I'm on a roll here. And I have a notebook with more recipes to try.


I love coconut. With the fall season coming, coconut is on the way out, to be replaced with pumpkin, apple, etc. Don't get me wrong, I'm addicted to any and all things pumpkin. But I figured coconut deserved one last hurrah before being somewhat overlooked for a while. May these nutritious overnight oats give you one last taste of summer.

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
¼ c. non-fat plain Greek yogurt
½ tsp. stevia
½ tsp. coconut extract
1 Tbsp. unsweetened coconut flakes

~ Directions ~

Combine all ingredients together and store in a mason jar in the fridge overnight. Top with whatever your little heart desires. I put blueberries on mine. I expect graham cracker crumbs would also be delicious (though not quite as healthy).
