Piña Colada Overnight Oats

Later today I'm headed to the beach for the weekend with friends. It's our last beach weekend of the summer - a sort of goodbye. This summer has flown by. I can hardly believe September is almost over. Soon the holidays will be upon us.

I love summer. There aren't many places on earth that make me feel as serene as the beach. The sound of the crashing waves. The feeling of the sand between my toes. There's nothing quite like it. I'm always looking for ways to make my regular-day life feel like that. A relaxing getaway. An escape from the ordinary, if only for a moment.

One of my favorite drinks to sip on the beach is a piña colada. That coconut/pineapple flavor combo is to die for. The problem? It's pretty much one of the most unhealthy cocktails you can have, riddled with sugar. Because of this, I rarely indulge. But when I do, it's always a treat.


But what about a piña colada as a part of your nutritious breakfast? Yes, it's possible. These guilt-free piña colada overnight oats use coconut extract and pineapple juice for a flavor combo that will make you feel like you're on an island far far away.

For a virgin piña colada, leave out the rum extract. :)

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
2 Tbsp. non-fat plain Greek yogurt
¼ tsp. rum extract
½ tsp. coconut extract
½ tsp. stevia
1 Tbsp. unsweetened coconut flakes
2 Tbsp. pineapple bits (with juice)

Combine all ingredients together and store in a mason jar in the fridge overnight. In the morning, grab your spoon and enjoy drifting away to an island paradise. You can top your oats with additional pineapple or coconut if desired.



Note: The rum extract contains little to no alcohol content, as it is only concentrated rum flavor. I've used it in these oats to give them more of a piña colada-like taste. If you do not like the taste of rum, you can leave it out. But no need to be concerned that you're having spiked oats for breakfast.
