Healthy Chocolate Peanut Butter Lava Cake (for one)

Sometimes you just need a lazy day. And that's exactly what I had all day yesterday. A nap. A TV show binge. It was so badly needed. I actually feel refreshed for once on a Monday morning.

When I woke up from my evening nap, I decided to treat myself. Wine and chocolate, obviously. The best part? The chocolate cake I threw together is completely clean so I could enjoy it guilt-free! What's even better? It's a lava cake. Because the only thing more awesome than chocolate is chocolate with an ooey gooey peanut butter center.


Oh my goodness, this cake was to die for.

~ Ingredients ~

Serves 1

3 Tbsp. whole wheat flour
¼ tsp. baking powder
1½ Tbsp. cacao powder
½ tsp. stevia
3 Tbsp. unsweetened almond milk
3 Tbsp. unsweetened applesauce
1 Tbsp. peanut butter
Cacao nibs (to top)

Tip: You can also use pumpkin puree in place of the applesauce.

~ Directions ~

Preheat oven to 350°. Grease a small ramekin.

In a small bowl, combine the flour, cacao powder, baking powder and stevia. Add the applesauce and almond milk, and stir until it forms a batter. Spoon half of the batter into the ramekin. Scoop the peanut butter into the ramekins into the middle of the batter. Then top with the remaining chocolate batter. Sprinkle with a few cacao nibs.



Bake for 25 minutes, or until fork inserted into the cake come out clean. Remove from oven and let cool.



Enjoy warm. The gooey peanut butter center melts out when you stick your spoon in.
