Endless Summer Overnight Oats

Hey there party people! How are you on this fine Tuesday afternoon? I'm in a great mood if you can't tell. Why? Because I'm going on vacation tomorrow. A much-needed vacation to NYC. Kind of a late birthday present from my parents. Heading up there to immerse myself in the arts scene I love so dearly and I cannot wait!

Today is also a little bittersweet. It's officially the last day of summer. The sun-soaked days will start to fade away. Goodbye bikini. *sniff*

Oh, who am I kidding? This is Florida! I'll be in a bikini on Christmas! Ha!

Regardless, I do love the summer months. But I'm also OBSESSED with fall. I honestly can't decide which I like more. But I am very excited for the autumn months, and for the Holidays to begin.

As a special goodbye to summer, I give you all one last summer-inspired overnight oats recipe for this year. Endless Summer Overnight Oats. I got the idea for these from the Endless Summer Smoothie I made a while back. It was so delish I had to make it into an overnight oats recipe.

So here you go. Enjoy and savor this last little taste of the summer season.

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
½ tsp. coconut extract
½ Tbsp. 100% pineapple juice
½ tsp. stevia
3 strawberries (fresh or frozen), pureed
1 Tbsp. unsweetened coconut flakes

Combine all ingredients in a mason jar or other sealed container. Let set in the refrigerator overnight, or at least for a few hours before enjoying.




Oats will keep in a sealed container for several days, so you are OK to prepare the beginning of the week for your weekday breakfasts. I always prepare 5 days worth of overnight oats on Sunday afternoon so I have a quick grab-and-go breakfast for the busy weekdays.
