White Winter Overnight Oats

I'm dreaming of a White Christmas just like the one I've never known...

Because I've lived in Florida my entire life. A white snowy Christmas is something that's only seen in movies down here. And the forecast for this year is HOT on Christmas day.

Let's be honest, I'm more likely to be in a bikini lounging pool-side with a frozen beverage on Christmas than bundled up in winter clothing running through a billowy white wonderland and sipping hot chocolate.

Sigh. Someday I'll live somewhere where I can experience a real white Christmas. Until that time, I guess I'll just have to make do with things that make me feel like it's winter. These White Winter Overnight Oats should do the trick on this warm Christmas Eve day.


These overnight oats bring together flavors of the season, with notes of orange, cranberry, vanilla and ginger. Yum!

If you find yourself in a climate that isn't quite so warm as mine, 1) I'm jealous of you because it probably actually feels like winter, and 2) might I suggest trying these warm?

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
1 tsp. vanilla extract
⅛ tsp. orange extract
1 pinch ground ginger
½ tsp. stevia
1 Tbsp. dried cranberries

Combine all ingredients in a mason jar or other sealable container and let set in the refrigerator overnight, or at least for a few hours.
