Gingerbread Overnight Oats

Happy Christmas Eve Eve! The countdown continues!

I'm so excited to finish out today because it means a much-needed vacation. So ready to celebrate Christmas with family and friends.

So, to keep me in the spirit, and to raise your spirits as well, here's another festive overnight oats recipe. Today's nutritious and yummy breakfast is reminiscent of the comforting flavors of gingerbread.


I love making gingerbread this time of year. I have a great recipe that was passed down from my great-grandmother. But, I'm sad to say, I've been so busy this year that the season has gotten away from me and I have yet to make any delicious Christmas treats. At least I have these gingerbread overnight oats to fill the void.

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
1 tsp. vanilla extract
½ tsp. ground cinnamon
¼ tsp. ground ginger
1 tsp. molasses
2 tsp. maple syrup
1 Tbsp. chopped pecans

Combine all ingredients in a mason jar or other sealable container and let set in the refrigerator overnight, or at least for a few hours.
