Peppermint Mocha Overnight Oats

You guys! We're only a few days away from Christmas!! Ahhh I can't wait! So I'm counting down with a new overnight oats recipe every day until Christmas Eve.

I'm definitely in the Christmas spirit now. Christmas parties. Holiday baking. Gift wrapping. I actually just finished wrapping my last gift so I am officially done and I can just coast into my favorite holiday of the year.

I'm usually not one to go to Starbucks every single morning. It's expensive, and it's honestly not the best coffee out there. I mean that in terms of coffee bean quality and in terms of the cleanliness of their beverages. So much sugar! However, I will admit I am a sucker for their holiday beverages. And this time of year means a LOT of peppermint mochas. This week I've had them almost every day. I can't help it. But, tis the season to indulge, I suppose.

But you know me. If there's something unhealthy that I enjoy a lot, I usually look for a healthy workaround so I can have my cake and eat it too. Usually, that comes by way of a new overnight oats recipe. And this time is no different. That's right...peppermint mocha overnight oats!


This is a yummy breakfast that will start your day off thinking about Christmas, which pretty much guarantees you'll have an awesome day. Plus, it's good for you and will keep you satisfied until lunchtime.

~ Ingredients ~

½ c. rolled oats
¼ c. unsweetened almond milk (or your milk of choice)
¼ c. brewed coffee
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
½ Tbsp. cacao powder
⅛ tsp. peppermint extract
½ tsp. stevia
1 Tbsp. cacao nibs

~ Directions ~

Combine all ingredients in a mason jar or other sealable container and let set in the refrigerator overnight, or at least for a few hours.
