Spiced Sugar Cookie Overnight Oats

Happy Saturday! How are you spending your weekend? Some last minute Christmas shopping? Luckily I'm pretty much done with mine. I just have wrapping left to do.

Today's post is short, sweet and to the point. It's been a busy week so I don't have any fun stories from the week to set this up. What I do have is another Christmas overnight oats recipe to share with you. Sound good? OK


That's right, folks. Spiced Sugar Cookie Overnight Oats. Cookies for breakfast? Well, why not?! You could even whip this up for an evening treat to curb your craving for Christmas sweets. If you're like me, you have a lot of holiday goodies polluting your kitchen, calling your name. It's a lot easier to resist the cravings when you have something else to take its place. And these oats have the added benefit of being good for you.


So go ahead, eat the cookie!

~ Ingredients ~

½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
1 tsp. vanilla extract
¼ tsp. butter extract
½ tsp. ground cinnamon
⅛ tsp. ground nutmeg
½ tsp. stevia
1 Tbsp. chopped pecans

Combine all ingredients in a mason jar or other sealable container and let set in the refrigerator overnight, or at least for a few hours.
