I love ice cream. As much as I eat clean, I still have a major sweet tooth. It will never go away.
So, Neapolitan ice cream...what's the deal with that stuff, right? I haven't had it in a really long time. But I remember eating it as a kid. No one ever wanted the strawberry. Nope. Vanilla and chocolate are where it's at. Especially chocolate. Chocolate vs. strawberry ice cream? No comparison. I always scooped around the strawberry ice cream when I was getting myself a bowl.
Well now I'm older and I actually like strawberries. A lot. They're one of my favorite types of fruit. I think pretty much anything strawberry flavor is delicious. Yes, even ice cream. Do I love it more than chocolate ice cream? Still no. But I'll eat it.

~ Ingredients ~
½ c. rolled oats
½ c. unsweetened almond milk (or your milk of choice)
1 tsp. chia seed (optional)
1 tsp. flax seed (optional)
½ tsp. vanilla extract
1 tsp. cacao powder
1 tsp. cacao powder
1 tsp. stevia
3 strawberries (fresh or frozen)

In a bowl, combine oats, almond milk, chia and flax seed. Mix well.
Separate the oat mixture into three portions and split between three bowls.
Bowl #1 - Chocolate: Add the cacao powder and 1/2 tsp. stevia. Mix until well combined.
Bowl #2 - Vanilla: Add the vanilla extract and the remaining 1/2 tsp. stevia, and mix until combined.
Bowl #3 - Strawberry: Place the strawberries in a blender and pulse until it forms a puree. Combine the puree and the oat mixture.
The next step is to layer the three oat mixtures. Grab a mason jar or other container that can be sealed. Start by spooning the strawberry oat mixture into the jar, followed by the vanilla and chocolate. Seal and store in the refrigerator overnight - or at least for a few hours - so the oats can set.
Oats will keep in a sealed container for several days, so you are OK to prepare the beginning of the week for your weekday breakfasts. I always prepare 5 days worth of overnight oats on Sunday afternoon so I have a quick grab-and-go breakfast for the busy weekdays.
